A Taste of Hawaii Served from a Vintage Fire Truck
Based in Greenville, NC, Prevail Food Truck is a Hawaiian street food vendor. Owner Chef Cole is pleased to assist couples in the creation of unique wedding experiences, amplified by his islandy cuisine. Coming from a background as a career chef, Chef Cole implements a vast knowledge of the culinary arts in each of his dishes.
Chef Cole had his first experiences professionally creating beautiful meals at The Woodlands Resort and Inn in Summerville. During this time, the venue was recognized as a Five Star Five Diamond Relaix and Chateau Property. Under the guidance of Chef Ken Vedrinski, Chef Cole pursued further training at the Culinary Institute of America in Hyde Park. After earning and completing an internship, Chef Cole continued as a private chef in Charleston, South Carolina. He was, ultimately, inspired by the vintage cars he encountered during this time. After time spent across the globe, from Ireland to the Bahamas, Chef Cole met his now-wife Shaina. They decided to pursue a venture together, inspiring Chef Cole to study Hawaiian cuisine under Chef Roy Yamaguchi. Eventually, this manifested into what Prevail Food Truck is today.
Prevail Food Truck is a restored 1946 Chevy fire truck that acts as a mobile catering business. This unique cuisine vendor can support over 100 guests and offers a wide variety of delicious dishes. Examples of these include dakkochi Korean chicken skewers, grilled teriyaki salmon, and Samoa bao-nut. Tastings are available and may be booked for up to four people at a time.
